We just had our housewarming party and I made this dip. It was a HUGE hit. Everyone who tried it loved it. And, it’s really not THAT bad for you. AND no cooking required!
12 oz reduced fat cream cheese
1 15oz can of pumpkin
2 Tbs sugar free maple syrup
1/2 cup brown sugar
1-2 Tbs cinnamon (really however much you want depending on how cinnamony you would like it)
How to make it:
1. Combine cream cheese and pumpkin using a hand mixer.
2. Add in brown sugar, maple syrup and cinnamon, blend until smooth.
3. Put in a bowl, or a carved out pumpkin and chill for at least 30 minutes before serving.
4. Serve with cinnamon & sugar pita chips, Nilla Wafters, or banana chips.
For those of you who did not know it, tonight there is a “blue moon”. It is my understanding, per the news channel, that it actually has nothing to do with the color of the moon. A blue moon is actually when there are two full moons in the same month. Apparently, that is happening tonight.
So me being me, I say, “Let’s do something crazy tonight that would only happen once in a blue moon!” I really need to learn to keep my mouth shut! My husband stopped on his way home from work to pick up milk, eggs and a surprise movie from the red box. He gets home, and….his car will not shut off. We can not turn the key at all, and his car is running.
I hope this doesn’t happen the next time there is a blue moon!!
Here is an easy yet nutritious breakfast that I enjoy making, especially during the work week. I take a sandwich thin and toast it, top it with light butter, cinnamon, and sliced banana. Another variation is to top it with peanut butter, cinnamon and sliced banana.
